Have you realized the power of the Crockpot? For a few months now, I haven’t had a bad one yet; thanks to my Chef husband and Pinterest. This is a Chicken Picatta recipe to be used in the crockpot. Picatta is a white-wine infused flavor from Italy. This simple recipe will shock you when you taste the incredible flavors.
Time expected is 5 minutes for preparation and recommended 8-10 hours in the crockpot
- Meat: 2 pounds chicken breast
- Condiments:
- 3 tblsp butter
- 1 1/2 tblsp Trader Joe’s everyday seasoning
- 1 tblsp salt (we used truffle salt)
- 1 tsp oregano
- 1 1/2 tsp garlic powder
- 1 tblsp Dijon
- Produce:
- 2 scallions
- Zest of 2 lemons
- Juice of 3 lemons
- 2 cloves grated garlic
- 2 tblsp capers
- Dairy: 1/4 cup parmesan cheese
- Beer, Wine & Liquor: 8 ounces white wine
Pre-Crockpot
- Put butter in the bottom of the crockpot
- Turn on the crockpot
- Cover chicken with salt and add to crockpot
- Add all dry ingredients.
- Add cheese, capers and zest.
- In a separate bowl, squeeze lemons. Add wine and mustard. Mix evenly until mustard is blended. Add mixture to crock pot
- Mix chicken and ingredients all together. Butter should be melted by now now and get all mixed in
- Set crockpot for 8-10 hours on low or 4-6 hours on high.
Serve over white rice in a bowl – voila!
