Crockpot Picatta

Have you realized the power of the Crockpot? For a few months now, I haven’t had a bad one yet; thanks to my Chef husband and Pinterest. This is a Chicken Picatta recipe to be used in the crockpot. Picatta is a white-wine infused flavor from Italy. This simple recipe will shock you when you taste the incredible flavors.

Time expected is 5 minutes for preparation and recommended 8-10 hours in the crockpot

  • Meat: 2 pounds chicken breast
  • Condiments:
    • 3 tblsp butter
    • 1 1/2 tblsp Trader Joe’s everyday seasoning
    • 1 tblsp salt (we used truffle salt)
    • 1 tsp oregano 
    • 1 1/2 tsp garlic powder  
    • 1 tblsp Dijon 
  • Produce:
    • 2 scallions 
    • Zest of 2 lemons 
    • Juice of 3 lemons
    • 2 cloves grated garlic 
    • 2 tblsp capers
  • Dairy: 1/4 cup parmesan cheese 
  • Beer, Wine & Liquor: 8 ounces white wine

Pre-Crockpot

  1. Put butter in the bottom of the crockpot
  2. Turn on the crockpot
  3. Cover chicken with salt and add to crockpot
  4. Add all dry ingredients.
  5. Add cheese, capers and zest.
  6. In a separate bowl, squeeze lemons. Add wine and mustard. Mix evenly until mustard is blended. Add mixture to crock pot
  7. Mix chicken and ingredients all together. Butter should be melted by now now and get all mixed in
  8. Set crockpot for 8-10 hours on low or 4-6 hours on high.

Serve over white rice in a bowl – voila!
