“Creme Brule” French Toast with Mango  Coulis and Spiced Yogurt

It’s summer! Summer in Florida means its hot as heck and mangos are everywhere – we don’t complain about either. For some reason, it’s easiest to eat the most un-healthy foods when it’s the time you want to be in the best shape. Here’s a refreshing, healthy twist to a family favorite breakfast: french toast, with mangos and spiced yogurt. This recipe curates the flavor of “creme brule.” Be prepared to dish up a second helping!

Secret Upgrade to French Toast – Yogurt

My mother-in-law introduced Daniel to a unique version of French toast when he was a little boy by adding a scoop of his favorite yogurt on top. This simple step takes French toast from tasty to rich and creamy with a custard-like bite. 

FAGE Yogurt has been our choice of yogurt since we first met. Daniel introduced it to me when started dating because it’s the chef preference in the kitchens where he worked. First thing I look for on the back of any label is added sugar. The first thing I look for on any yogurt is live active cultures. FAGE Yogurt is our go to choice for yogurt because they have no added sugar and are made with only milk and live active yogurt cultures.

“Creme Brule” French Toast Recipe  

  • 1/2 lb brioche bread, buy the whole loaf and cut into 1 1/4 inch slices
  • 4 tablespoons butter for pan
  • 3 eggs, beaten
  • 1/2 cup whole milk
  • 1/2 heavy Cream
  • 3 tablespoons rum, optional
  • 2 tablespoons maple syrup 
  • 4 tablespoons sugar, divided into quantity 2 of 2 tablespoons each
  • 1  teaspoon cinnamon, ground
  • 1 teaspoon vanilla extract, optional
  • ¼ teaspoon nutmeg, optional

  1. Make custard mix: Place all liquids, 2 tablespoons of sugar, and spices in the blender. Blend until smooth. Pour into a 9×9 dish or 9-inch pie pan or cake pan (really whatever you have that the liquid is not too deep nor too shallow.)
  2. Preheat the oven to 350F and place a large non stick pan on medium heat. Add your butter and allow it to begin to melt. 
  3. Piece-by-piece (no this isn’t a Kelly Clarkson song) soak break on top. Then flip to back and soak other side. Place freshly soaked slice in the custard mix and press down – let soak for about 5 seconds per side. Place coated pieces onto a plate or tray. 
  4. Sprinkle top side of each soaked piece generously with sugar. 
  5. Once butter begins to foam, turn up the heat to medium-high. Make sure it’s not too cool and the toast soaks up the butter but doesn’t “brown.”
  6. Place bottom side of the French toast with no sugar down in the pan. Let cook for 3-4 minutes – ensure it’s not burning.
  7. Flip toast and cook on sugar side for about 2 minutes. Peak every 15-30 seconds depending on your comfort to make sure there are no dark spots – you don’t want to burn the sugar!
  8. Place onto baking tray and place in oven for 7-8 minutes to ensure it’s not too wet in the middle.
  9. Now make the delicious toppings

Mango Coulis 

  • 1-2 ridiculously ripe mangoes, scraped off of the skin and seed 
  • 2 tablespoons sugar
  • 1/4 cup water
  • 1/2 teaspoon lemon juice 
  1. Take all of the mango pulp you can get off that mango and purée it in a blender on high
  2. In medium saucepan, add all of ingredients and place the pan on medium heat.
  3. Stir often until it cools down and resembles a jam.
  4. Remove from the heat and strain through a fine mesh strainer for the smoothest purée

Spiced Yogurt Topping

  • One (1) 7 oz package of FAGE Total 2% Yogurt 
  • Zest of 1 lime 
  • 1/4 teaspoon of ground Cardamon  
  • Pinch of salt
  • 2 tablespoons honey (we like to use raw honey in a jar that is thicker so that the yogurt stays nice and thick) 

Mix all the ingredients together in a small bowl! Yep – thats it.
