Meal Planning Madness – Week 2 of the Challenge

Meal Planning Slump Already?

Last week, I decided that we would do grocery shopping on Saturday. However, week 1 was full of some sad and chaotic events. Daniel’s grandma passed away on Tuesday. He went to visit her many times and then on Saturday (yesterday), he helped his family pack up her apartment in one day. 

Seeing a Difference!

Today, I made breakfast smoothies for us. Lunch was avocado toast. Dinner was fried eggs and black beans (and some sour cream/chipotle sauce) over white rice. Daniel helped with the rice. It was yummy! I felt encouraged that I could actually become the primary cook in our house.

Budget Cuts on the Grocery Line

Who is with me? This week, we spent $150 on groceries and next week my goal is $100. As I mentioned, I’ve structured this method of meal planning for eight planned meals per week. This allows for some flexibility in the week and definitely flows into the following week.

    Meal preparation has always been a goal of mine. I admire your ability to do this for a whole month. I’m going to try to jump on board with you and try to pre-plan most of my meals this week. Find that when my meals are pre-plan they’re better tasting that when I just throw them together.
